Staying Positive
Hello Bright Bod!
There has been a lot going on in the world causing a lot of emotional struggle lately.
However, I have been staying positive. I have been focussing on the positive, counting my blessings, being grateful for what I have, being supported by my tribe, focussing on what I can do, taking action and prioritising my self care which includes eating well, getting enough sleep, not doing too much running around and staying active.
Looking after myself is one of the reasons I teach Zumba, as it forces me to start my week off on a high note and finish my week with a shake and a shimmy with some uplifting songs that keep me going! I have really found it help me.But I know it is not for everyone.
I would love to hear you share your experience on how you manage when times get emotionally tough. Please share in our Bright Bods Facebook group.
What's New
Please Support Dietitians To Support The Most Vulnerable
The NDIS has been a huge success to many people with disability but the system has many flaws. Our (Dietitians) NDIS rates have been cut by $15/hour over the last 2 years. Taking into account everything businesses need to pay, then tax, this is quite a huge hit to a university qualified professional who works in the most complex area of dietetics, constantly increasing skills, knowledge and expertise with Professional development and helping the most vulnerable people. We significantly enhance downstream outcomes related to healthcare, allied health therapy and people's ability to contribute to society. There are just under 10,000 Accredited Practising Dietitians in Australia (mostly female) and we are an incredibly valuable resource. Many Dietitians leave the field due to lack of work available in a country that has such a high need for our service. I would like to ask if you could please contact your local member to support NDIS Dietitians. See the letter you can adapt for yourself or in my Bright Bods' file.

Grow It Know It
Brocoletti
If you like eating broccoli, brocoletti is a great pick as you go plant to grow in your garden. Being a brasicas, it can be suceptible to getting the cabbage white butterfly laying eggs and catterpillars munching on the plant. A multi-pronged approach is often needed: having a large diversity of different edibles flowers to build a good ecosystem, growing natsturtiums in another part of the garden and you if needed netting your veggie bed.
Packed with fibre for a healthy gut, vitamin A, C, K, folate, iron and manganese.
You can eat the leaves, stem and floret. Great in a stir fry, soup, stew, steamed or even raw from the garden as a snack.
Recipe of the Month
Broccoli and Cauliflower Popcorn
Getting the kids involved in making Broccoli and Cauliflower Popcorn can be a great way to help them learn to eat these veggies and also bump up the iron in their diet with the egg. In our household we often make our own breadcrumbs too from the ends of bread that no-one eats so it reduces food waste also.
Serves: 4-6
Ingredients
- 1/2 broccoli
- 1/4 cauliflower
- 2 eggs
- 2 cups of breadcrumbs or bread crusts blended into breadcrumbs
- Mild Extra Virgin Olive oil- spray
Method
- Pre-heat your oven on 180 degrees Cencius.
- Whisk the eggs in a bowl
- Place the breadcrumbs in another bowl.
- Spray a baking tray with oil
- Chop up the broccoli and cauliflower into bite size pieces. Start with small pieces if your child is still learning to like these foods or large pieces if they are enjoying eating them happily.
- Add the cauliflower and broccoli pieces into the bowl to coat with egg.
- Then roll each piece individually into the breadcrumbs and then place on the baking tray.
- Bake for 20 munites or until golden brown.
- Serve as a side to your main meal, entre or even as a snack.
