Hello Bright Bod!
A fantastic way to start and keep up healthy habits, like eating nutritious foods and staying physically fit, is to do it with others. Cooking and eating together with family and friends, organising movement get togethers, like going for a walk or doing a class makes looking after yourself a lot easier.

Recipe of the Month
Roasted Chickpea Salad
With the weather only starting to warm up and lettuce a plenty in the garden, have a go at this salad with a warm, crunchy twist.
Serves 2
- 1 can of chickpeas (375g)
- 1 cup wom bok cabbage or salad greens of choice
- 1 cup corn
- 1/2 cup cherry tomatoes - quartered
- 1/2 cucumber - diced
- 1/2 cup beetroot (canned) or boiled/roasted, diced 1.5cm size
- 1/2 avocado diced 1.5cm size
- 1 shallott- finely sliced
- 1 clove of garlic, minced/finely diced
- Fresh herbs of choice (from the garden): eg 2 Tb parsley, chives, rosemary, sage
- 2 Tb Extra Virgin Olive Oil
- Juice from 1/2 lemon
- Pinch of salt
Instructions:
- Preheat the oven to 180°C.
- Chop up the herbs pf your choice and add to a baking tray with the crushed garlic, pinch of salt and 1 Tb oil.
- Drain and rinse the chickpeas and add to the pan.
- Stir the chickpeas to coat in the oil and your fresh flavours.
- Place in the oven for 40 minutes. Stir after 30 minutes to ensure the chickpeas are browning evenly.
- Chop up the salad ingredients, place in a bowl and stir.
- Make the dressing: mix the oil (2TB), any other herbs you desire, pinch of salt and lemon juice. Add more or less as desired.
- When the chickpeas are crunchy, remove from the oven to cool a little before topping onto your salad and stiring together with the dressing.
