Hello Bright Bod!
Do you feel the cooler weather makes it harder to opt for those healthy foods even though you know it is good for you?
Sometimes doing something for yourself can not be as motivating as doing it for others. Many people choose healthy foods to ensure the people around them eat healthy: the kids, parents, housemates, work colleagues.
But even more so these days people are making food choices based on their eco-fiendly conscious. Opting, for wholesome nutritious foods over processed foods (like fruit or nuts as a snack instead of a sweet biscuit) considering the energy and resources that when into the growing of all the ingredients, processing, packaging and waste products and the effect on our air, water/sea and the animals that live in it.
So the next time you want to choose those comfort foods, think of the people around you and how your food choices can influence them as well as the journey of your food and who may have put their love and energy into it.

What's New
Harvest Festival
In the week of World Envoirnment Day, June 5th, I am super excited to be a part of the Harvest Festival this year, hosting my Eat Like and Eco-Warrior Workshop Series again. This time at Jilliby Public School who are hosting Artisans on Acres where you can connect with, and learn from local growers, artisans, and makers. We will have a stall on Saturday, so come say hello!
Workshop 1: Measuring Eco-footprints & Sustainable Eating 1pm Saturday 8th June
- Learn tips and tricks to get your family learning to eat and loving more plant based foods without nutritient deficiencies.
Workshop 2: Zipping Towards Zero Waste & Taking Action 10am Sunday 9th June
- Did you know you could save $2500 per year just by not wasting food? It is also the biggest impact you can have on our enviroment

Clinic Changes
Bright Diets is undergoing some significant changes. After growing things over the last few years and with a number of unexpected events occur, Bright Diets is now downsizing in order to have a better work-life balance and be able to focus on projects in the future.
Over the months, Bright Diets will be handing over some clinics to Kylie Spicer under her practise: Balanced Bites Dietitians. A big congratulations to Kylie in taking this massive step. Both Carin and Kylie will continue to work from Wyoming on Thursdays at Central Coast Family Psychology. Carin will take over the phone calls and continue to provide home visits, phone, and video consulations as well Zumba classes!
Under Balanced Bites Dietitians, Kylie and Margaret will continue seeing patients at the Copacabana, Woy Woy, Tuggerah, and Wyong clinics.
If you are seeing Kylie or Margaret you will be sent an email shortly asking for your consent to share/transfer your medical information to Balanced Bites Dietitians to ensure smooth transition of quality care. You can book your appointment with Balanced Bites Dietitians here.

Be Bold With Zumba Gold!
I am loving my Zumba Gold classes on Fridays and I am also filling in for Terry and Cassie at Terrigal Over 55's Leisure and Learning Centre on Tuesdays at 1.30pm over the next few weeks. It is such a fantastic centre with lots of dance classes, social events and delicious meals on the menu.
Zumba Gold is a low impact, uplifting dance class for those new to dance, older active adults, people with an injury, neurodiverse individuals or those with disability.
I actually prefer Zumba Gold to the regular Zumba as there is more time to enjoy the music when you dance, there is a bit of salsa, meringue, swing, cha cha, cumbia, belly dancing, tango and flamenco.

Wear comfortable exercise clothing recommended, dress up optional!
First timers, come 15 minutes early to complete paperwork, introductions and put your oder in for the coffee cart if you want to have lunch afterwards.

Recipe of the Month
Happy Scrappy Stock
Ingredients
- IL+ container kept in freezer
- Vegetable peels
- Chopped off ends of vegetables
- Vegetable seeds you may discard like pimpkin seeds
- Vegetables that may start to look questionable
- Foraged/home grown greens: dandelion leaves, chiweed, warrigal greens, onion weed
- Herbs of your choice such as parsley, a bay leaf, basil, oregano
- A few generous pinches of salt and sprinkle of pepper as desired
Method
- Save all your vegetables scraps: peels, chopped off ends, seeds and almost questionable veggeis by placing in your container in the freezer. Add to it over a few weeks to months.
- When your container in the freezer is full of your vegetable scraps, take it out of the freezer and thaw.
- Add the vegetable scraps to a medium sized pot, add just enough water to cover and boil on high heat.
- Chop up desired herbs and greens and add to the pot
- Add salt and pepper
- When the veggetable scraps are soft. Remove from heat, allow to cool and blend with a stick blender or use a soup ladle to transfer mixture to a blender.
- Use as stock in your favouirite recipes such as risotto, soup, casseroles.
