Simplify
Hello Bright Bod!
I don't know about you but I fee like a lot of people around me are going through some big changes this year.
When life gets a bit chaotic or big change occurs, sometimes simplifying things makes a big difference. This could mean having a weekly meal plan, shopping on the same day each week, eating the same lunch or breakfast everyday or just having baked beans on toast for dinner.
Being kind to yourself is so important: try to be Ok with what you can do, say 'no' if you need to and focus things that help you heal or cope with all that nervous energy.

Clinic Changes
Bright Diets is undergoing some significant changes. After growing things over the last few years, it is now time to simplify in order to look after myself and young family.
Over the next couple of months, Bright Diets will be handing over some clinics to Kylie Spicer under her practise: Balanced Bites. A big congratulations to Kylie in taking this massive step. Both Carin and Kylie will continue to work from Wyoming on Thursdays at Central Coast Family Psychology. Carin will take over the phone calls and continue to provide home visits, phone, and video consulations as well Zumba classes!

Recipe of the Month
Buckwheat Salad
Super easy,sustainable salad.
Ingredients
- 1 cup buckwheat groats
- 1 x 400g can chickpeas
- 1 small can of beetroot
- 1 shallott
- 1 cucumber
- 1 medium tomato
- 100g goats cheese
- 1 squeeze of lemon juice
- 2 Tb oil from the herby goats cheese tub
- or use 1 Tb extra virgin olive oil with some mixed herbs like parsley, thyme and oregano.
- salt and peper to taste
Method
- Cook the buckwheat groats in 2 cups water for 20 minutes.
- Drain the excess water and allow to cool.
- Chop up all the salad ingredients.
- Add all ingredients into a bowl.
- Mix together and serve.
