Spreading the Zumba Gold Love
My new class is starting on Monday at 9am on 2nd February at the Gosford 50 Plus Leisure and Learning Center. This first class is is a free class for all who comes!
My other regular Classes are:
5.30pm Mondays and 11am Fridays at Narara Eco-Village.
First class is free. Wear comfortable exercise clothes. First timers, come 15 minutes early to complete paperwork and introductions. Further details here.
Zumba Gold classes are run all over the Central Coast by other instructors. Please share the Zumba love by sharing with your family, friends and health professionals.

Grow It Know It
For a long time now I have wanted to inspire people to connect more with their food to improve not only their health and well-being, but also the health or our Mother Earth. As a result have finally had the realisation to incorporate a regular Grow It Know It section in Bright Inspirations, showcasing a food each month that is super easy to grow and used in my monthly recipe. I hope you come on this journey with me to grow, connect and love your food.
Shallot
Shallotts are super easy to grow. Simply buy a bunch form the shop, chop 2cm off the root end and place into water for about 1 week or until the roots gor to at 1cm long. Plant and remember to water regularly.
If you are like me and find you can not eat a lot of shallots before their best by date, you can chop up some of the bunch and freeze to prevent food wastage. This also saves time when adding more veggies to a future meal.
You can cut the green shoots off to harvest like a pick as you go crop. However, remember to allow at least one plant go to flower to collect the seeds in order to sow again in Autum to Spring for a continuous supply most of the year.
You may be lucky like me and they start sprouting on their own in your garden.

Recipe of the Month
Simple Potato Salad
Serves: 4-6
- 4 medium- large potatoes- peeled and chopped into 1.5cm cubes/pieces
- 8 Eggs
- 1/2 cup Greek Yoghurt
- 1 cup peas
- 2 or more sprigs of parsley
- 2 shallots
Method
- Fill a pot with water and boil potatoes until soft.
- Drain water and place potatoes into a bowl.
- In another pot, place the eggs and add cold water to just cover the eggs.
- Put the pot on stove and turn on heat to high.
- When the water starts to boil, put a timer on for 8 minutes. You may wish to remove thelid if the lid starts to lift up with the boiling water.
- Chop up shallot and parsley. Place in a large bowl with the peas.
- When the eggs are cooked, drain the hot water from the pot and fill with cold water to cool the eggs.
- When eggs are cool to touch peel the eggs and chop up and add to the bowl.
- When the potatoes are cooked, drain and add to the bowl.
- Add Greek yoghurt and mix the potatoes, shallot, parsley, peas and eggs together.
- Serve as a side dish.
