This year has been an incredibly challlenging and rocky year for Bright Diets to say the least with many problems arising to overcome and staff changes. From all of us at Bright Diets we would like to say a big thank you to everyone who has worked with us and supported us this year!
We really appreciate being able to help our clients eat better to improve the many aspects of their lives. We know it is not easy working with someon on such a personal thing as the foods your eat. But love being able to help you change not only your eating but the way you think and feel about eating, moving your body for enjoyment and achieving those health and lifestyle goals.
We greatly value the expertise, time and energy of all those health professionals and disability workers who reffer, advocate and encourage our clients to come to us for assistance. We thank you too!

What's New
End Of Year Rebates
As it is nearing the end of the year you may want to check if you have Dietitian consultation rebates from your private health insurance or perhaps your GP's EPC/ health care plan from your GP. Having a consultation at this time of year can be the quite timely to help you manage your eating during the festive time. Call or book your appointment today.

Recipe of the Month
Festive Falafels
Serves 6-8
Ingredients
- 2 cups dried chickpeas
- 6 cups water
- 1/2 tsp bicarb soda
- 1 small onion
- 2 cloves crushed garlic
- 1 tsp cumin
- 1/4 cup chopped corriander
- 1/4 cup parsley
- 1/4 cup seseme seeds
- For green falafels add 1/2 cup finely sliced spinach
- For red falafels: add 1/2 cup roasted then pureed beetroot
- Extra Virgin Olive Oil for frying
Method
- The day before, soak the chickpeas in water with with the bicarb soda.
- Drain well.
- Divide the mixture into 2 batches. One for red and one for green falafels.
- For green falafels place all ingredients into a food processor except for the beetroot and process until the mixture is finely ground into a coarse meal, adding some water so the mixture sticks together.
- For red falafels add all ingredients except for the spinach.
- Refrigerate for 1 hour or overnight.
- Roll the mixture into small balls or patties. Falafels slightly smaller than golf balls are perfect for sharing at seasonal gatherings.
- Heat oil in pan on medium - high heat and fry the falafels
- Serve with hommus as a dip.
