Inspiration
It is funny how inspiration can make you feel so excited and motivated to do something that you put all your energy and free time into doing this new thing. And then that motivation fizzels out over time as your realise you are not quite meeting your goals or it gets all a bit too much with everything else going on in life.
This was how I felt when I started mushroom growing. I was so excited and almost obsessed, that I took off more than I could chew. I bought so many different types of mushroom spawns within the space of a couple of months and did not give myself enough time to learn about the process to maximise my yeild. Yes, I did have success with producing my own mushrooms at first but I realised I needed to take it slower and build my knowledge for it to be a sustainable part of my lifestyle and not waste my time and money with potentially avoidable failures.
Just like many of us starting a new habit, I plan to try again, with this experience behind me, a little more wisdom and even consulting with more of an expert in the mushoom growing field.

Welcome Sarah!
We are excited to welcome Sarah Willoughby to the Bright Diets!
Sarah is a kind and compassionate dietitian who is committed to providing evidence-based practice and collaboratively works with her clients to develop individualised plans. She understands that lifestyle change can be challenging and is passionate about simplifying complex nutrition information into practical strategies that can be maintained long term. Her goal is to help educate and empower others to improve their nutrition and quality of life. She also enjoys debunking nutrition myths and helping individuals create a healthy relationship with food.
Sarah also enjoys living an active lifestyle as she loves to mix up her daily exercise including walks, CrossFit, and yoga. In her spare time, you will usually find Sarah cooking or trying out new restaurants and cafes with her friends and family!

Recipe of the Month
Wild Fried Rice
Serves 4
Ingredients
- 1 cup wild rice
- 2 cups boiling hot water
- 1 clove filely chopped garlic
- 1 cup cooked mungbeans or canned lentils
- 1 large carrot, diced
- 1 cup green beans, diced
- 1 cup frozen corn
- 1 cup mushrooms, diced
- 1 cup cashews or your nut of choice
- 2 TB extra virgin olive oil
- 1/4 cup finely sliced fresh herbs: corriander, vietnamese mint/basil
- Salt for taste
Method
- Boil the rice using the absorption method:
- Put the kettle on to boil
- Add 1 Tb oil to meadium heat saucepan, add the rice and stir to coat the rice with oil.
- Turn heat down to low, add boiling water and put the lid on.
- Cook for 45 minutes. Then remove the pot from the heat but keep lid on for another 5-10 minutes. Note wild rice takes a longer time to cook than basmati rice (approx 10 minutes)
- Chop up all other ingredients.
- Heat a frying pan on medium heat
- Add 1 Tb oil and stir fry carrot.
- When the carrot is a little soft add mushrooms and stir to cook a little, then add green beans, corn, cooked mungbeans or lentils, nuts and then the herbs and salt last.
- Serve or freeze some for a quick home made frozen meal.
