It feels like the unspeakable dreaded lurgy and it's knock on effects has been well and truely affecting our community a lot more over the last few months, causing staff shortages, a backlog of work as well as stress and changes. This is including for us and even for the health professionals, like GP's, nurses and their support team, we like to work with who are doing such a great job doing their best to care for their patients.
Yes, it can be difficult when a lot of things do not go to plan, especially when trying to get back to normal life and building back those social routines.
So please be kind and considerate. If we or someone you know are a bit late in getting back to you, please be understanding and reach out if you feel you need to.

Nutrition Consult Options
We want to let you know that we are more than happy to offer phone or video consultations if you can not attend clinic. Home visit options are also available.

Recipe of the Month
Shakshuka - Middle Eastern Baked Eggs
Ingredients

olive or canola oil spray
-
medium onion, peeled and chopped
-
2 cloves garlic, peeled and chopped
-
200 g mushroom, sliced
-
1 medium red capsicum, seeded and diced
-
400 g can cannellini beans
-
¼ cup water
-
800 g can no-added-salt crushed tomatoes
-
1 tsp ground cumin
-
1/2 tsp smoked paprika
-
pepper
-
125 g baby spinach leaves, chopped
-
1/2 punnet cherry tomatoes, halved
-
6 eggs
-
1/2 cup fresh Italian parsley, finely chopped, to serve
Method
-
Spray a large frypan with oil and place on medium to high heat.

Add onion and cook for 3 minutes until softened.

Add garlic, mushrooms and capsicum and cook for 5 minutes.

Mix through beans, water, canned tomatoes, cumin, paprika and pepper.

Increase heat and bring to the boil then simmer for 5 minutes until slightly thickened.

Add spinach leaves and gently mix until they start to wilt; sprinkle over cherry tomatoes.

Using a spoon, create 6 little wells, then crack each egg into a well.

Cover the pan with a lid and cook until the egg whites are firm and yolks are just set, about 5 minutes.

Remove from heat, top with parsley and serve immediately.
VARIATIONS
Vegetables – You can swap out the onion, mushrooms, capsicum, spinach, cherry tomatoes and/or baby spinach for any other vegetables like shallot, leek, grated or finely diced carrot or zucchini, rocket or bok choy.
Spices – This can be made with an Italian flavour by swapping the cumin and smoked paprika for basil and mixed herbs. Or you can leave the spices out.
