Juggling New Habits
Hello Bright Bod!
It seems spring has come early and many people get that motivation to kickstart their healthy habits again.
I often say healthy eating is a juggling and a balancing act. Quick fixes 'diets', magic pills and potions (shakes) sold to you by people that want to make money do not work long term as they do not fix the underlying issues. There are so many factors that influence our eating and many of them include mastering skills such as meal planning, budgeting, shopping, food preparation, food gardening, time management and organisation.
Instead of trying to start a totally new way of eating, think about what areas you need to upskill in and work on that to achieve your healthy eating habits that will work for you long term.

Recipe of the Month
Vietnamese Pho
Serves 4
Ingredients
-
6 cups beef bone broth, beef stock or vegetable stock
-
1 onion, peeled and halved

4 whole carrots, chopped
-
4 garlic cloves, finely chopped
-
1 whole cinnamon stick
-
2 star anise
-
2 cardamom pods
- 1 tablespoon coriander seeds
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 carrot
- 1 cup mushrooms
Toppings:
- 450 grams tofu or meat of your choice sliced thinly
- 450 grams vietnamese rice noodles
- fresh corriander
- fresh vietnamese mint
- fresh basil mint
- thinly sliced red or white onions
- 1/2 cup of chopped green onions
- 1/2 cup bean sprouts
Instructions
- In a large pot, add in beef bone broth/stock, onion, carrots, mushrooms, garlic cloves, cinnamon sticks, star anise, cardamom pods and coriander seeds.
- Bring the broth to a boil over medium-high heat. Reduce heat to medium-low and let broth simmer for 30 minutes.
- Cook rice noodles in a separate pot, set aside.
- Slice tofu into bite size cubes and cook over medium heat for 3-5 minutes, and turn off the heat.
- Once your broth is ready, you can prepare your bowls to serve
- To serve the Pho, place the rice noodles in a soup bowl, add the broth, and the tofu or meat and immediately add your toppings. Serve hot.
- Enjoy!
